Maca Energy Balls
- 1/2 cup raw pepitas
- 1/2 cup raw sunflower seeds
- 1/2 cup nut of your choice (I suggest pistachios, cashews or almonds)
- 1 tablespoon maca powder
- 1-2 tablespoons maple syrup (based on your desired level of sweetness)
- 1 tablespoon chia seeds
- 3-4 tablespoons water (start with 3T, adjust as needed)
- In a food processor or high-speed blender , grind up the nut of your choice, chia seeds, sunflower seeds, pepitas and maca powder to a coarse consistency.
- Then, add the maple syrup and 3T of water and continue to pulse until a dough forms. Add an additional 1T of water if needed.
- Roll into balls and place in the freezer for 5 minutes.
- Snack on immediately, or store in the refrigerator for up to 3 weeks! Alternatively, can store in the freezer for months.
