Sugarless Apple Dessert
- 3 envelopes unflavored gelatin
- 1 (12 oz.) can unsweetened frozen apple juice concentrate, diluted
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 5 c. peeled, sliced apples
- 1 Tbsp. reduced calorie margarine
- Combine gelatin, diluted apple juice concentrate, cinnamon and nutmeg in a large skillet, stirring well.
- Let stand 1 minute. Cook over low heat for 1 minute or until gelatin dissolves.
- Add apples.
- Cover and continue to cook over low heat 15 to 20 minutes or until tender.
- Stir apples gently and baste with pan juice several times during cooking process.
- Add margarine; stir gently until margarine melts.
- Remove from heat.
- Cover and refrigerate until thoroughly chilled.
- Spoon mixture into dessert dishes to serve.
- A serving amount is 1/2 cup at 121 calories.
- Diabetic Exchange:
- 1 1/2 starch.
