Gilly'S Rotisserie Chicken & Hot Pepper Jelly Sandwich
- 2 pieces Your favorite sandwich bread - Toasted
- 1 tablespoon Hot Pepper Jelly
- 1 teaspoon Light Fat Free Mayo
- Sliced Rotisserie Chicken (Can be made with leftover turkey as well.)
- Fresh Tomato Slices
- Mozzarella Cheese (Can be substituted for provolone or any sliced cheese you have at the time)
- 2 Fresh Basil Leaves
- Set your oven to broil at 350.rnPop your bread in the toaster, but use a lighter setting because we will be putting it in the oven (or toaster oven) in a few minutes.
- Slice the chicken, tomato, and cheese (if needed) and set them aside on a plate. Place your 2 basil leaves on the plate as well. (If you don't have fresh basil, dried basil will also work.)
- Grab a baking sheet and a piece of foil, remove the toast and place open face on the sheet. Spread the HPJ on one piece and the light mayo on the other. Build the sandwich by placing the chicken and tomatoes on the HPJ side, and place the basil and cheese on the mayo side. Broil the sandwich open faced for a few minutes until you see the cheese starting to melt.
- Remove from oven & let cool for a minute. Take the cheese and basil slice, place it on top of the chicken and tomato slice. Slice and serve!
- *Serve with a side you have leftover in your fridge, or any chip you desire in your cabinet. I personally love to slice this sandwich in half and eat it with nothing else. It is delicious, savory, and warm. It's also my favorite go-to for when I'm tucked away in the house on a chilly fall day. rn(In the summer I make and pack it in a cooler. It's a perfect on the go sandwich and tastes delicious without heating up as well.)*
