Blueberry Cheese Bars
- 1 cup pecans (divided use)
- 1 1/4 cups flour
- 1/2 cup firmly packed brown sugar
- 1/2 cup margarine
- 1/2 cup flake coconut
- 2 packages (8 oz.) cream cheese
- 2/3 cup granulated sugar
- 2 eggs
- 2 tsp. vanilla
- 3 cups blueberries
- 1 cup sugar
- 3 Tbsp. cornstarch
- 1/2 cup water
- Combine flour and brown sugar.
- Cut in margarine until fine crumbs form.
- Add 1/2 cup finely chopped nuts and coconut.
- Remove 1/2 cup and set aside.
- Press remaining crumbs in bottom of greased 13x9 pan.
- Bake at 350 degrees for 12-15 minutes.
- Beat cream cheese, sugar, eggs and vanilla in small bowl until smooth. Spread over hot baked crust.
- Return to oven and bake 15 minutes longer.
- Mix sugar, cornstarch and add water gradually.
- Stir in blueberries and mix until thickened.
- Spread over cream cheese. Sprinkle reserved crumbs over top.
- Bake an additional 10-15 minutes.
