Andrew'S Party Chicken
- 4 boneless chicken breasts, halved and skinned
- 2 c. water
- 2 Tbsp. butter or margarine
- 1/2 tsp. salt
- 1 c. long grain white rice
- 4 c. marinara sauce (store bought)
- 2 Tbsp. chopped fresh basil leaves
- 2 Tbsp. chopped fresh oregano leaves
- 1 green pepper, thinly sliced
- 2 c. Mozzarella cheese, grated
- 1/2 c. Parmesan cheese, grated
- 4 c. cooked chicken
- 10 oz. cooked broccoli (fresh or frozen)
- 1/2 c. mayonnaise
- 1/4 c. flour
- 1 c. chicken broth
- 1/2 c. milk
- salt and pepper to taste
- paprika
- dill weed
- Arrange cooked chicken or turkey in baking dish and top with cooked broccoli.
- If fresh broccoli is used, separate it.
- Mix flour, salt, pepper and mayo in saucepan and gradually blend in broth and milk.
- Stir constantly over low heat until thickened. Pour over chicken and broccoli.
- Sprinkle top with paprika and dill weed.
- Bake at 350u0b0 for 25 minutes.
- Serves 4 to 6.
