Armadillo Eggs

  1. Preheat oven to 325u0b0.
  2. Cut up 2 ounces cheese into hunks and set aside.
  3. Grate other 6 ounces cheese and mix with 1 pound pork sausage and 1 1/2 cups Bisquick mix.
  4. Knead well.
  5. Set aside.
  6. Slit and scrape seeds from each pepper (leave stems on peppers).
  7. Rinse peppers and then stuff each with the 2 ounces cheese hunks. Separate dough into patties and form around peppers.
  8. Make sure ends are closed and only stems are showing.
  9. Beat eggs in a small bowl and set aside.
  10. Spread coating mix on a plate.
  11. Dip each coated pepper into egg and then roll into coating mix.
  12. Bake on cookie sheet for 30 minutes but after 15 minutes flip each pepper. Makes 18 peppers.
