Sauteed Turkey Sausage(With Peppers And Herbs)
- 4 turkey sausages (2/3 lb.)
- 1 tsp. olive oil
- 1 medium clove garlic, peeled and cut in half
- 1 small red onion, sliced
- 1 medium each yellow and red bell pepper, sliced
- 1/8 tsp. salt
- 1/8 tsp. fresh ground black pepper
- 1 Tbsp. minced fresh mint
- 1 Tbsp. minced fresh basil
- 4 tsp. balsamic vinegar
- Put the sausages into a medium size saucepan and cover with water.
- Bring just to a boil, reduce the heat and simmer 8 minutes.
- Remove the sausages from the water and cut into 1 inch slices.
- Heat the olive oil over medium heat in a large nonstick skillet.
- Add the sausage slices and saute for about 3 minutes, just until lightly browned.
- Remove from the pan.
- Add the garlic and onion to the pan, sauteing 3 minutes.
- Add the bell peppers; saute 10 minutes.
- Stir the sausages back into the pan with the salt, pepper, milk, basil and vinegar.
- Stir 2 minutes and serve.
