Fruit Pizza
- 1 roll Pillsbury sugar cookie dough
- 1 (8 oz.) pkg. cream cheese
- 6 Tbsp. sugar
- 1 (16 oz.) can apricot halves
- 1 pineapple ring
- 1/2 c. raspberries
- 1 pt. strawberries, halved
- 2 Tbsp. cornstarch
- 1/4 tsp. pumpkin pie spice
- 1/2 c. red currant jelly
- Sugar cookie dough needs to be room temperature.
- Pat into a 12-inch pizza pan.
- Bake at 375u0b0 for 15 minutes.
- Cool.
- Put cream cheese in a small bowl, heat in microwave on Low for 2 minutes. Stir in 4 tablespoons sugar.
- Spread on crust.
- Drain apricots, reserving 2/3 cup syrup.
- In 4-cup glass measure, combine cornstarch, remaining sugar and spices.
- Stir in reserved syrup and jelly.
- Cook, uncovered, on High in microwave for 3 to 4 minutes until boiling.
- Arrange fruit on top of pizza, beginning in center with pineapple rings, arrange raspberries around pineapple, then apricot halves and then strawberries.
- Spoon syrup over fruit; chill.
- Cut into wedges.
