Zucchini Pie
- 1 1/4 c. potato flakes
- 3/4 c. flour
- 1/2 c. grated cheese
- 1/3 c. soft margarine
- 2 c. thinly sliced zucchini
- 1/2 c. sliced onion
- diced pepperoni
- Mozzarella cheese, cut up or shredded
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1 (8 oz.) can tomato sauce
- 2 Tbsp. oil
- water
- Saute zucchini and onion in oil until tender.
- Add pepperoni and cook.
- Stir in tomato sauce, 3/4 can water, 1/2 cup potato flakes, salt, pepper and oregano.
- In bowl, combine 3/4 cup potato flakes, flour, grated cheese and salt.
- Cut margarine into potato flakes in bowl; mix until crumbly.
- Add water; stir dough until it holds together.
- Press into bottom and sides of ungreased 9-inch pie pan or baking dish.
- Spread mixture into crust.
- Sprinkle Mozzarella cheese on top.
- Bake in a preheated 375u0b0 oven for 20 minutes or until done.
