Zucchini Pie

  1. Saute zucchini and onion in oil until tender.
  2. Add pepperoni and cook.
  3. Stir in tomato sauce, 3/4 can water, 1/2 cup potato flakes, salt, pepper and oregano.
  4. In bowl, combine 3/4 cup potato flakes, flour, grated cheese and salt.
  5. Cut margarine into potato flakes in bowl; mix until crumbly.
  6. Add water; stir dough until it holds together.
  7. Press into bottom and sides of ungreased 9-inch pie pan or baking dish.
  8. Spread mixture into crust.
  9. Sprinkle Mozzarella cheese on top.
  10. Bake in a preheated 375u0b0 oven for 20 minutes or until done.
