Mixed Green Salad With Homemade Dijon Balsamic Dressing
- Dijon Balsamic Dressing
- 5 teaspoons dijon mustard
- 1 tablespoon extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon salt
- Mixed Green Salad
- 4 cups mixed greens
- 1/4 cup steamed lentils
- 2 pieces steamed beets
- 1 handful mini heirloom tomatoes
- 1 teaspoon chia seeds
- 1 pinch fresh shaved parmesan cheese
- 1/2 piece avocado
- Place all of the Dijon Balsamic Dressing ingredients into a small bowl and whisk until a nice emulsion forms -place to the side
- Cut beets, mini heirloom tomatoes, & avocado into desired bite-sized pieces
- Place mixed greens in a large bowl & top with lentils, beets, tomatoes, chia seeds, & parmesan cheese
- Drizzle with desired amount of Dijon Balsamic Dressing and toss
- Top with avocado & enjoy!
