Eggnog Chicken & Waffles

- 4 Chicken Wings, whole
- 1/2 cup Pancake Mix
- 1/2 cup All Purpose Flour
- 1 teaspoon Creole Seasoning
- 2 Large Organic Brown Eggs
- 1/2 tablespoon Allspice Seasoning
- 1/2 tablespoon Paprika
- 1/2 tablespoon Ground Thyme
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Ground White Pepper
- 1/2 cup Eggnog
- dash Red Cayenne Pepper
- Waffles
- 1 cup Pancake Mix
- 1 cup Eggnog
- 2 Large Organic Brown Eggs
- 1/2 teaspoon Ground Nutmeg
- 1/2 teaspoon Ground Cinnamon
- 2 tablespoons Sugar
- 1/2 tablespoon Vanilla Extract
- 2 tablespoons Melted Butter
- To begin the waffles, add 1 cup of pancake mix to a bowl.
- Add ground nutmeg, sugar, vanilla extract and cinnamon into bowl with pancake mix and slightly stir.
- In a separate bowl, separate the 2 egg yokes from the egg whites and add the yokes into the bowl with other ingredients.
- Whip the leftover egg whites until it begins to rise and foam.
- Add eggnog to bowl with ingredients and stir until slightly smooth.
- Add melted butter and whipped egg whites into bowl with ingredients and lightly fold. Do not over blend.
- Pre-heat your waffle maker to default temperature.
- Once the waffle maker is ready, add waffle mix into waffle maker for 3 to 4 minutes or until done and place onto plate.
- To begin the chicken, rinse chicken and cut the wings in half.
- Season your wings and drumettes with creole seasoning and coat with 2 tbsp or more of all purpose flour.
- In a separate bowl, add 2 eggs and eggnog. Stir until smooth.
- Add the chicken pieces to the bowl and allow to sit for a few minutes while you prepare the flour and seasoning bag.
- Pre-heat your pan to medium heat and add enough olive oil to cover the bottom of the pan completely.
- Get a large zip lock bag and add flour, pancake mix, ground allspice, paprika, garlic powder, red cayenne pepper, white ground pepper and ground thyme and shake until mixed.
- Add chicken from the eggnog and egg mix into the zip lock bag and shake until each piece is coated well.
- Fry chicken pieces for 7 to 8 minutes on each side and set to side to cool.
- Serve with warm syrup.
