Mexican Chicken
- 2 1/2 lb. chicken, stewed, boned and cut up in bite size pieces
- 1 bag plain Doritos
- 2 Tbsp. chopped onions
- 2 c. chopped bell peppers
- 1 Tbsp. chili powder
- 1 Tbsp. garlic powder
- 4 c. grated Cheddar cheese
- 2 cans cream of chicken soup
- 1 can Ro-Tel tomatoes
- paprika
- 1 can cream of mushroom soup
- Grease a large casserole and cover bottom with Doritos that have been dipped in chicken stock.
- Next, make a layer of chicken and sprinkle with peppers and onions.
- Cover with cheese.
- Mix soups, tomatoes, garlic and chili powder separately.
- Pour over chicken mixture.
- Top with more cheese; sprinkle with paprika. Bake at 350u0b0 for 45 minutes.
