Hot Browns
- 1/2 c. butter
- 1/2 c. flour
- 2 c. milk
- 1 tsp. salt
- 2 egg yolks, beaten
- 6 slices cooked turkey breast
- 3 English muffins, split and toasted
- 1/2 c. grated Cheddar cheese
- 6 tomato slices
- 6 Tbsp. butter
- 2 Tbsp. brown sugar
- 6 slices bacon, fried crisp
- 1/2 c. sliced mushrooms, sauteed in 1 Tbsp. butter and 1 Tbsp. lemon juice
- Melt butter in saucepan; stir in flour.
- Cook 2 minutes and add milk gradually.
- Stir until thickened.
- Season.
- Add some of the sauce to beaten egg yolks, then return mixture to saucepan. Heat through and keep warm.
- Arrange turkey on muffins.
- Top each muffin with sauce, Cheddar cheese, 1 slice tomato, 1 tablespoon butter and a sprinkling of brown sugar.
- (May be prepared ahead at this point and refrigerated.)
- Before serving, broil 3 to 5 minutes or until lightly brown.
- Garnish with bacon and warmed sauteed mushrooms.
- Serves 6.
- They are rich and delicious.
