Gingerbread(Low Cholesterol)
- 1 1/2 c. all-purpose flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/4 tsp. ground cloves
- 1/2 c. boiling water
- 1/3 c. molasses
- 1/4 c. corn oil
- vegetable cooking spray
- 1 c. unsweetened applesauce
- Sift first 7 ingredients together in a medium bowl.
- Make a well in center of mixture.
- Combine water, molasses and corn oil and stir well.
- Add to flour mixture, beating at medium speed of electric mixer until smooth.
- Spoon into 8-inch square pan coated with cooking spray.
- Bake in a preheated 325u0b0 oven for 25 to 30 minutes.
- Top servings with the applesauce.
