Irish Soda Bread

  1. Stir together flour, baking powder, soda, salt, sugar and caraway seed into a bowl.
  2. Cut in the shortening until mixture resembles meal.
  3. Make a well in center and pour in buttermilk. Add currants and mix lightly.
  4. Turn out on a floured board and knead gently.
  5. Shape into a ball and fit into a greased 8 or 9-inch round cake pan.
  6. Cut loaf crosswise into quarters, about 2/3 way through dough with a sharp knife.
  7. Brush top of loaf with melted butter and sprinkle with additional sugar.
  8. Bake in 350u0b0 oven for about 30 minutes.
