Bran Bread
- 1 1/2 c. whole wheat flour
- 1 1/2 c. bran cereal
- 1/2 c. packed brown sugar or 1/2 c. honey
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 c. milk
- 2 Tbsp. oil
- 1 egg
- Mix dry ingredients, set aside.
- In small bowl beat milk, oil and egg just to blend.
- If honey is used instead of sugar, add the honey to this wet mixture now.
- If you used brown sugar, put the sugar in with the other dry ingredients.
- Pour mixture over flour mixture, stir just until moistened.
- Turn into 8 x 4 x 2-inch loaf pan.
- Bake at 350u0b0 for 45 to 50 minutes or until toothpick inserted in until it comes out clean.
- Cool in pan 10 minutes, then cool on rack.
- Serve sliced thin.
- Wrap and store airtight.
- Will keep 1 week wrapped, or in the freezer for up to 6 months.
