Hearty Farm Soup
- 1/2 lb. dry navy beans
- 1/2 lb. dry pinto beans
- 1/2 lb. dry butter beans
- 1 large ham hock
- 1 lb. ground sausage
- 1 large apple, cubed
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 2 Tbsp. brown sugar
- 2 Tbsp. mustard
- 2 cans tomatoes, cut (undrained)
- garlic powder to taste
- salt and pepper to taste
- Wash, sort and mix all three beans together.
- Cover with water and soak 1 hour.
- Drain; cover with water again.
- Add ham hock and bring to boil.
- Simmer for 1 1/2 hours or until beans are tender. In a skillet, brown sausage with apple, onion and celery.
- Drain off fat.
- Stir sausage mixture into beans.
- Stir in brown sugar, mustard and tomatoes; add garlic powder, salt and pepper to taste. Cover and simmer 10 to 15 minutes.
- Serves 10.
