5 Pepper Chicken Fajitas(Low-Fat)
- 4 chicken breasts, skinned and boned
- juice of 1 lime
- 2 cloves garlic, crushed
- 3 scallions, chopped
- 1/2 tsp. cumin
- 1 medium red, yellow and green bell pepper
- 8 whole wheat tortillas
- 1 Tbsp. vegetable oil
- 1 Tbsp. water
- 2 tsp. jalapeno peppers, chopped fine
- fresh cilantro, chopped
- 1 medium tomato, diced
- salsa to taste
- salt and pepper to taste
- Slice chicken into strips; place in large bowl and squeeze lime juice over chicken.
- Add garlic, scallions, pepper, salt and cumin and toss.
- Slice bell peppers into strips and set aside.
- Wrap tortillas in clean cloth.
- Place in oven at low setting while preparing fajita mixture.
