Wild Rice And Oyster Dressing
- 1 box Uncle Ben's original wild rice
- 1 3/4 c. water
- 2 tsp. instant chicken bouillon granules
- 1 Tbsp. butter
- 3 Tbsp. jalapeno peppers, chopped
- 1 lb. chicken livers, boiled
- 1 c. green onions, finely chopped
- 2 pt. raw oysters
- Measure water into a saucepan and add rice, bouillon granules, margarine and peppers.
- Bring to a boil.
- Cover tightly and simmer until all water is absorbed (about 25 to 30 minutes).
- Add chicken livers that have been chopped in the food processor and the raw oysters.
- Cook for about 10 more minutes.
- Add green onions.
- Stir well and serve.
- This dish is relatively expensive to make but it is worth the expense.
- The Cobb children think that Christmas and Thanksgiving dinner is incomplete without their wild rice and oyster dressing.
- Serves 9.
