Greek Spinach Pie(From Mom'S Friend, Jenny)
- 1 lb. filo dough
- 2 pkg. chopped spinach, cooked and drained well
- 1 lb. Feta cheese, crumbled
- 6 eggs
- 2 sticks butter, melted
- 1 stick margarine, melted
- 6 ripe plum tomatoes, peeled and diced
- 1/2 c. black olives, coarsely chopped
- 3 scallions (2 inch of green left on), slice thin
- 1 clove garlic, minced
- salt to taste
- black pepper to taste
- 8 fresh basil leaves, slivered
- 1/4 c. olive oil
- 1/2 to 1 lb. spaghetti
- In
- large bowl combine the tomatoes, olives, scallions, garlic,
- salt,
- pepper
- and
- basil.
- Toss gently and add olive oil.
- Stir and let stand, covered, for at least 3 hours.
- This developes
- the
- flavors.
- Cook
- pasta
- according
- to
- package directions
- and toss the cooked pasta into the prepared sauce. Serve immediately or at room temperature.
