Flan De Queso
- CARAMEL
- 1/4 cup water
- 1 cup sugar
- FLAN
- 6 ounces cream cheese, softened
- 3 eggs
- 3 egg yolks
- 2 cups milk
- 1 tablespoon vanilla
- 1 can plus 7 tablespoons sweetened condensed milk (17.5 ounces)
- 3/4 cup water
- CARAMEL
- In a saucepan, bring water and sugar to a boil, stirring until sugar dissolves.
- Lower the heat and burn the sugar into a soft caramel.
- Immediately pour caramel into six ramekins, tipping quickly to coat the bottoms.
- Set aside to let cool.
- FLAN
- Preheat oven to 325 degrees.
- In a large bowl, using a hand mixer, beat the cream cheese until soft.
- Beat in eggs and egg yolks, one at a time, until well combined. Continuing to beat, add the milk, one half cup at a time.
- Then add the vanilla and sweetened condensed milk, mixing well. Sieve the mix. Set aside.
- Put the caramel-coated ramekins on top of a dish towel inside a 3-inch-deep baking pan.
- Fill each of the caramel-coated ramekins with an equal amount of liquid custard. Fill the baking pan three-quarters full of hot water.
- Cook for about 40 to 50 minutes, until the center of the flan is pretty firm. Allow to cool and serve at room temperature or chilled.
- Loosen the edges with a knife before inverting on a plate to serve.
- Makes six 8-ounce servings.
