Pasta And Beans
- 15 oz. can California large limas (butter beans) with liquid
- 1/2 lb. bacon cut into inch square piece
- 1/2 small chopped onion
- 1 tsp. parsley
- 1/2 lb. wheat pasta, elbows or corkscrews
- 1 tsp. cornstarch
- salt
- pepper
- Boil water in large saucepan with pinch of salt to cook pasta following manufacturer directions. Drain and set aside.
- In 10" deep skillet, saute bacon pieces and onion until golden and crispy. Add canned beans, with liquid, all at once. Rinse out can with 1/2 cup water. Add cornstarch. Stir until cornstarch is dissolved. Add to skillet and stir slowly with wooden spoon to mix and thicken. Cook about 5 minutes. Add drained pasta and parsley. Mix well and heat through. Add salt and peper to taste. Enjoy! Add a side salad or crusty bread for a complete meal.
