Chicken Divan Quiche
- 1/2 c. uncooked long grain rice
- 1 1/4 c. water
- 1/4 tsp. salt
- 2 eggs, slightly beaten
- 1 1/2 c. (6 oz.) shredded Cheddar cheese, divided
- 1 (10 oz.) pkg. frozen chopped broccoli
- 3 Tbsp. chopped sweet red pepper
- 3 Tbsp. chopped onion
- 1 Tbsp. all-purpose flour
- 1 (6 3/4 oz.) can chunk chicken, drained
- 4 eggs, slightly beaten
- 1 c. half and half
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. salt
- 1/4 tsp. ground red pepper
- Combine rice, water and 1/4 teaspoon salt in a 1 1/2-quart casserole.
- Cover with heavy-duty plastic wrap; microwave at High 5 minutes.
- Cook, covered, at Medium-high (70% power) for 12 minutes, or until rice is tender.
- Cool.
