Chicken Poppers
- 1/2 cup mozzarella cheese
- 2 small jalepeno peppers, seeded & chopped
- 1/4 Tbsp fresh basil, loosely chopped
- 1 Tbsp fresh ginger root, grated
- 2 cloves garlic, finely chopped
- 4 boneless skinless chicken breasts
- salt & pepper
- buttermilk or eggwash
- breadcrumbs
- cooking spray
- Mix together cheese, chopped basil, chopped jalepeno, garlic, and ginger in a small bowl & set aside.
- Slice each half breast crosswise (like you're going to butterfly, but then cut all the way through) to create thin tenders (2 from each half breast). Pound each tender to 1/4" thickness. Sprinkle each side lightly with salt & pepper. Place a spoonful of cheese mixture near one end of the chicken breast and roll, pinching ends to shut. Dip in buttermilk followed by breadcrumbs and lay on wax paper. Repeat with remaining chicken, filling, and coating. (Can prepare to this point several hours in advance or the night before.) Preheat oven to 350. Spray baking sheet with cooking spray. Place chicken on baking sheet and spray each tender once or twice with cooking spray. Bake for 25-30 minutes.
- Very good served over capellini or angel hair pasta and drizzled with a little teriyaki sauce. (You can also skip the cheese and spread the jalepeno/basil/garlic/ginger mixture directly on the chicken and roll up. An alternative to buttermilk & breadcrumbs is wrapping in 1/2 sheet of lightly buttered (or sprayed) phyllo dough per half breast.
