Lentil Chili
- 1 cup bulgur
- 1 cup lentils
- 3 boullion cubes
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon dried marjoram
- 1 teaspoons dried oregano
- 1 teaspoons cumin
- 1 teaspoon pepper
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, chopped
- 3 large potatoes, cut in 1/2 inch cubes
- 1 14-ounce cans crushed tomatoes
- 3 cups water
- At home: Combine and seal bulgur, lentils, boullion cubes and spices in a plastic bag.
- At the camp site: Heat oil in a large pot over medium-high heat. Add onion, bell peppers and garlic. Saute until onion is tender, about 8 minutes.
- Add lentil-bulgur mixture and remaining ingredients. Cover and simmer until lentils are tender, stirring occasionally, about 30 minutes.
