Chinese Chicken Salad With Peanut Dressing
- 1 1/2 lb chicken breast
- 1 whole green onion
- 1 quarter size slice ginger
- 1 Tbls dry sherry
- 1/2 tsp salt and sugar
- 2 c water
- 3 cups shredded lettuce (any lettuce can be used but suggest mix of arugula & cabbage)
- Peanut Sauce:
- 3 Tbls peanut butter
- 5 Tbls salad oil
- 4 Tbls soy sauce
- 4 Tbls sugar
- 4 tsp white vinegar
- 1 tsp sesame oil
- 1/4 - 1/2 tsp cayenne pepper
- 2 Tbls minced green onion
- 2 Tbls cilantro
- Chicken:
- Place chicken in 2 quart pan with onion, ginger, sherry, salt, sugar and water. Bring to a boil, then cover and simmer for 20 minutes. Remove and let cool until it is cool enough to handle (save broth for a soup). Shred meat in long shreds.
- Sauce:
- Stir together peanut butter and salad oil until well mixed and looks creamy. Add soy sauce, sugar, vinegar, sesame oil and cayenne pepper. Gently fold in green onions and cilantro.
- Assembly:
- Arrange shredded chicken over lettuce and dress with peanut sauce. Serve and enjoy.
