Ma Kaylor'S Angel Food Cake
- 1 c. cake flour
- 7/8 c. sugar (divided 3/4 c. plus 2 Tbsp.)
- 1 1/2 c. egg whites (12 whites)
- 1 1/2 tsp. cream of tartar
- 1/4 tsp. salt
- 1 1/2 tsp. vanilla
- 1/2 tsp. almond extract
- Measure and sift flour and sugar together three times.
- Measure egg whites and remaining ingredients into a large bowl.
- Beat until frothy.
- Add gradually 2 tablespoons at a time, 3/4 cup sugar. Beat about 10 seconds after each addition.
- Continue beating until stiff peaks are formed.
- Sift about 3 tablespoons flour over meringue and fold in.
- Repeat until all flour is folded in. Mixture will be thick.
- Place ungreased tube pan.
- Cut batter with a knife to remove air and level top until even.
- Bake at 375u0b0 for 30 to 35 minutes.
- Immediately turn pan upside-down over a bottle and cool.
- Loosen with spatula.
