Veggie And Goat Cheese Burrito

  1. Cook the squash and the spinach according to package directions.
  2. Warm tortillas in the oven or microwave.
  3. Meanwhile, heat oil over medium heat in a skillet, then add garlic, onion, red pepper, and cumin. Cook until softened (but not too soft--I like a little crunch), about 5 minutes.
  4. Add squash, then spinach, and stir to blend.
  5. Spoon into tortillas over goat cheese, roll into burritos, and top with salsa.
