Veggie And Goat Cheese Burrito
- 1/2 medium red onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 tablespoon peanut or olive oil
- 1 package frozen squash
- 1 package frozen chopped spinach
- 1 tablespoon salsa
- 2 ounces goat cheese, crumbled
- Light flour tortilla
- Cook the squash and the spinach according to package directions.
- Warm tortillas in the oven or microwave.
- Meanwhile, heat oil over medium heat in a skillet, then add garlic, onion, red pepper, and cumin. Cook until softened (but not too soft--I like a little crunch), about 5 minutes.
- Add squash, then spinach, and stir to blend.
- Spoon into tortillas over goat cheese, roll into burritos, and top with salsa.
