Potato Wedges With Dipping Sauce
- 2 large baking potatoes
- 2 teaspoons olive oil
- 2 teaspoons balsamic vinegar
- 2 tablespoons Parmesan cheese
- 2 tablespoons bread crumbs
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt & pepper
- Dipping sauce
- 1/2 cup light sour cream
- 1/4 teaspoon garlic powder
- 1 tablespoon fresh chives
- A few drops of hot sauce
- In a small bowl mix the oil and vinegar. In another combine the cheese, bread crumbs, Italian seasoning, salt and pepper.
- Lightly spray a baking sheet with Pam.
- Cut potatoes lengthwise and then each side into 4 wedges.
- Brush the potatoes with oil and vinegar mixture the dredge in the breading mixture.
- Put on the pan skin side down.
- Bake at 425 for 30 minutes or until crisp.
- Dipping sauce.
- Mix together 1/2 cup light sour cream with 1/4 teaspoon garlic powder and a tablespoon of fresh chives
