Spicy Cajun Shrimp
- 2/3 Cup rice
- 1-1/3 C. Water
- 1/2 tsp. salt
- 3/4 # shrimp, peeled and cleaned
- 1/4 tsp. cayenne
- 1/4 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 2 Tbl. Butter
- 2 cloves garlic, minced
- 1 tsp.worchestershire
- 1 lg. tomato, seeded and diced
- 1/4 C. Beer
- Bring water, rice and salt to a boil. Cover, reduce heat to low and cook for 18 minutes. Remove from heat and let sit, covered for 5 minutes.
- In a small bowl, mix together dry spices.
- Melt butter in a medium saute pan over medium high heat. Add garlic and cook for 30 seconds. Add spicies and worchestershire, cook until fragrant.
- Add shrimp and tomatoes. Stir and cook for 2 minutes. Add beer, cover and cook 1 minute more. Serve with rice.
