Peanut Butter Pie
- CRUST
- 1 c vanilla wafer cookie crumbs
- 1/2 c finely chopped, toasted pecans
- 6 Tb butter
- 2 Tb sugar
- 1/4 tsp cinnamon
- FILLING
- 1 1/4 c creamy peanut butter
- 8 oz cream cheese, softened
- 1 c powdered sugar
- 2 Tb unsalted butter
- 1 1/4 c whipping cream
- 1 Tb vanilla
- GLAZE
- 1/2 c whipping cream
- 4 oz semisweet chocolate, finely chopped
- Combine crust ingredients, press into 10" pie pan. Chill while making filling.
- For filling, you can whip the cream with vanilla then fold it into the other combined filling ingredients, or just put all into a heavy duty mixer and whip until light. Pour into crust. Refrigerate until firm.
- For glaze: bring cream to boil then reduce heat, add chocolate and stir until melted and smooth. Cool glaze slightly then pour over filling. Cover and refrigerate at least an hour.
- Serve in small wedges like a cheesecake.
