Baked Orange Berry Duck
- 6 Lbs.Duck.
- SAUTE:
- 1 Tbs. Butter.
- 2 Tbs.Extra Virgin Olive Oil.
- STUFFING:
- 11/4 Oranges(peeled and sliced into sections).
- 1/4 cup Dried Apricots.
- 1/4 cup Dried Cranberries(cherry flavored).
- 1/4 cup Orange Juice.
- 1/4 cup Apricot Juice.
- SAUCE:
- 1 cup Mixed Berries(fresh or frozen)Blackberries, Raspberries and Blueberries.
- 2 Tbs. Apricot Preserves.
- 1/4 cup Orange Juice.
- 1/4 cup Apricot Syrup.
- Saute the Duck on both sides in a large fry pan (about 8 minutes a side or until it is brown).In a large mixing bowl mix all of the stuffing ingredients together and then place the stuffing inside the Duck cavity, then tie close with cooking string.
- Preheat the oven to 350 degrees.Place the Duck in a roasting pan with breast side up,cook the Duck for 1 Hr.(covered) and another 1 Hr. and 15 minutes (uncovered).
- Put all of the sauce ingredients together in a food processor and mix until it is well blended.
- Bast the Duck with 1/3 of the sauce, the last 10-15 minutes of cooking.
- To serve: Cut thin slices of the duck and use the extra sauce for garnish.
