Baked Orange Berry Duck

  1. Saute the Duck on both sides in a large fry pan (about 8 minutes a side or until it is brown).In a large mixing bowl mix all of the stuffing ingredients together and then place the stuffing inside the Duck cavity, then tie close with cooking string.
  2. Preheat the oven to 350 degrees.Place the Duck in a roasting pan with breast side up,cook the Duck for 1 Hr.(covered) and another 1 Hr. and 15 minutes (uncovered).
  3. Put all of the sauce ingredients together in a food processor and mix until it is well blended.
  4. Bast the Duck with 1/3 of the sauce, the last 10-15 minutes of cooking.
  5. To serve: Cut thin slices of the duck and use the extra sauce for garnish.
