Rocky'S Chess Pie
- One 9-inch pie crust, unbaked
- 1/2 cup butter, melted
- 1-1/2 cups sugar
- 3 eggs
- 1/4 cup buttermilk
- 1-1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 1 teaspoon vinegar
- 1/4 cup cornmeal
- 1 tablespoon flour
- Prepare unbaked pie shell. Preheat oven to 425 degrees. Combine butter and sugar over low heat and simmer slowly, stirring, for 5 minutes.
- In separate bowl whisk together eggs, buttermilk, vanilla, salt and vinegar. Remove butter/sugar mixture from heat, let cool slightly and mix in egg mixture. Stir in cornmeal and add flour very slowly to prevent clumping.
- Pour filling into pie shell and bake at 425 degrees for 10 minutes. Reduce heat to 300 degrees and bake for 40 minutes. Pie is done when center quivers slightly.
