A-B-C 1-2-3 Cake
- 1 Golden Delicious medium apple, peeled, cored, and coarsely chopped
- 2 ripe bananas, mashed
- 3 medium carrots, peeled and finely grated
- 1 1/2 cup sugar
- 1/2 cup vegetable oil
- 1/2 teaspoon pure vanilla
- 2 cups unbleached all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
- 1/2 cup golden raisins
- 1/2 cup nuts, chopped finely
- Preheat the oven to 350 degrees F. Grease and flour a 13X9 inch metal baking pan. In a large mixing bowl, combine the apples, carrots and bananas and sugar; mix well and set aside for 10 minutes.
- In the same mixing bowl then add the oil and vanilla until all is well combined and the sugar is dissolved. Combine the dry ingredients in a different large mixing bowl by sifting them together. Start with the flour, baking soda, cinnamon, nutmeg, allspice and salt.
- Stir the dry flour mixture into the apple-banana-carrot mixture, after well combined gently stir in the raisins and nuts. Pour into the baking pan; bake in the preheated oven for 45 to 50 minutes until a toothpick inserted comes out clean.
- Let the cake cool; cut into squares.
