Grandma Neeb'S Pot Roast
- 1 3-5 pound boneless chuck roast, well marbled
- 10 small golden yukon potatoes
- 1/2 pound baby carrots
- 1/2 chopped sweet yellow onion
- 2 cloves of garlic, chopped
- 1/2 cup butter
- 1 1oz pkg of dry onion soup mix
- 1 10oz can cream of mushroom soup
- 1 5oz can chopped mushrooms
- 1 10oz can beef broth
- 1/2 teas black pepper
- Heat a large oven safe skillet over high heat. Add butter. As the butter melts add the roast. Brown completely on both sides. Add onion and garlic. Surround the roast with peeled potatoes and carrots. Add remaining ingredients. Cook on stove top on low to medium heat until the ingredients are well combined. Cover the roast and bake at 300 degrees for 90 minutes.
