Homemade Fondant
- 3 cups miniature marshmallows
- 1/2 oz white chocolate with cocoa butter, finely chopped
- 1 T butter, cut up
- 1 1/2 tsp milk or cream
- 1 tsp vanilla or other flavor
- 1 1/2 c powdered sugar, plus more for dusting
- Paste food color
- Mix marshmallows, chocolate, butter, and milk in a medium microwave safe bowl.
- Microwave on high until marshmallows start to puff and melt, about 1 minute. Stir until smooth.
- Add vanilla or other flavor.
- Mix in 1 1 /2 cups powdered sugar.
- Sprinkle 1/2 c powdered sugar on work surface. Place marshmallow mixture on work surface and start kneading. Sprinkle with more powdered sugar as needed. Knead until smooth and not sticky, about 10 minutes.
- To color, knead in paste food coloring. Wearing gloves is recommended.
- Use immediately.
- A silicone mat is recommended for rolling. Roll 1/8" thick to cover a whole cake.
- To store, wrap in plastic wrap and then in a ziploc bag, at room temperature up to 2 months.
