Sheila Dailey'S Baked Fish Casserole
- Cod, Haddock or Halibut
- SHallots
- Garlic
- Mushrooms
- Dry Vermouth
- Sour Cream
- Feta Cheese
- Fresh Dill
- Dried Bread Crumbs
- Shredded or Grated Parma cheese
- Butter a covered baking dish.
- Add chopped shallots with some chopped garlic to bottom of dish.
- Cover bottom/shallots with Dry Vermouth. Add sliced mushrooms - if they're cut large as Andrew cut them, then sautee them first, otherwise cut them thin and small.
- Rinse and dry fish (cod, halibut, or haddock) and place on top in one layer
- salt and pepper fish and add fresh chopped dill and a few more of the shallots, plus a little garlic. Cover with a mixture of sour cream and crumbled feta - mix it a little, so the dill spreads a bit
- Top with bread crumbs, then some shredded parm (though I had to used grated since that was all we had)
- Bake at 375 until fish is cooked through - about 30 minutes. I start out with it covered and take the cover off at the end to crisp up the bread crumbs.
