Spicy African Rice & Peanut Soup

  1. In large saucepan, heat the vegetable oil in medium-high heat to saute the onions, sweet potato, and garlic until onion is softened (about 5 minutes). Add chicken broth, thyme, cumin, and rice. Bring to boil, reduce heat and simmer, cover until rice is cooked and vegetables are tender. Add salsa, beans, and zucchini and cook until zucchini is tender. Add peanut butter, stir until completely combined.
