Ahi Poke
- t 1/2 lb sushi grade ahi, cut into 1/2" cubes
- t/2 Maui Onion (or other mild/sweet onion, very thinly sliced, and then 'quarter' the slices
- t bunches scallion, green only (this is for consistency of color only, the white part tastes fine, so OK to use white if you like)
- t-5 Tablespoons toasted sesame seeds (MUST be toasted, and don't be shy)
- tT red pepper flakes
- t-2 1/2 Tablespoons Aji Mirin (sweet rice cooking wine)
- t Tablespoons sesame seed oil
- t Tablespoons lite soy sauce (lite important so not too salty)
- tosher or Salt to taste (add ONLY AFTER you have let fish marinate 30 minutes in sauce to get a gauge if it needs some salt...sometimes it does, sometimes it doesn't.
- Mix ingredients and let sit, refrigerated for 30 minutes before serving. Add mango, avocado, or pineapple to taste if you like.
- Always KEEP REFIGERATED!!
- Recipe will hold as "sushi" for a full 24 hours or so. After that, take any remaining poke and quickly sear it in a little sesame for 1-2 minutes just to cook outside of cubes, and throw on some greens for a nice healthy salad.
