Single Girl Melty Chocolate Peanut Butter Cake
- 1/2t + 1 T unsalted butter, divided
- 1 t unsweetened cocoa
- 1/4 C semisweet or bittersweet chocolate chips
- 1 egg
- 4 t sugar
- 1 T peanut butter or 1 T bourbon
- pinch salt
- 1 t flour
- Preheat oven to 375 and set baking sheet on rack in center of oven. Grease a 3//4 C ramekin w 1/2t butter, then dust w unsweetened cocoa. Set aside.
- Put 1 T butter and the chocolate chips in small heatproof bowl set over small pan of simmering water. Heat, stirring until chocolate melts; let cool a few min.
- Whisk egg, sugar, and peanut butter in a small bowl to blend. Whisk in chocolate mixture until well incorporated, then stir in salt and flour just until combined. Pour batter int ramekin. Set on baking sheet and bake until as done as you like, 7-10 min for molten center or 10-12 min for soft center.
- Let cake cool 2 min Protecting hands, invert onto a plate. Eat right away
