French Onion Soup
- French bread, cut into 4 thick slices
- Sweet onion, sliced thin
- 4 Tbspn butter
- French Onion soup broth
- paprika
- thickly sliced meunster or mozerrela or swiss or gruyere cheese
- 1 Tbspn balsamic vinegar
- Preheat broiler on low broil.
- Melt butter in large pot
- Add sweet onions. Cook until onions are completely carmelized. Add a little salt. Add broth. Simmer for 10 minutes. Reduce heat to low and add in vinegar. Keep on low.
- Meanwhile, arrange bread slices on baking sheet and broil for 3 minutes, turning once, until well toasted. Remove from heat.
- In onion soup bakeware placed atop a baking sheet, fill each bowl 2/3 full with soup. Top with toasted bread, 2 slices of cheese each and a sprinkle of paprika in center.
- Broil 5 minutes or until bubbly.
- Serve immediately.
