Beef Stroganoff
- 2 tsp. vegetable oil
- 1 lb. lean round steak (2 x 1/4-inch strips)
- 2 onions, chopped
- 2 garlic cloves, minced
- 1 Tbsp. flour
- 2 c. sliced mushrooms
- 1 c. vegetable juice
- 1 c. beef broth
- 1 Tbsp. Worcestershire sauce
- 1/4 c. minced parsley
- 1/4 c. nonfat sour cream
- 4 c. hot cooked egg noodles
- In a large nonstick skillet, heat the oil.
- Add the beef and cook, turning as needed, until browned, about 5 minutes.
- Transfer to a plate.
- Spray the skillet with nonstick spray; heat.
- Add the onion and garlic; cook, stirring, as needed until softened, about 5 minutes.
- Add the flour and cook, stirring constantly, until the flour is lightly browned, about 1 minute.
