Shrimp Scampi With Capers And Tomatoes
- 2 pounds Shrimp, peeled and deveined
- 1/4 cup Olive oil
- 4 Tomatoes
- 5 large Garlic
- 2 tablespoons Capers
- 1/2 cup White wine
- 2 tablespoons Butter
- 1/2 cup Flat leaf parsley
- 1/4 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Lemon juice
- 1 cup Pasta water
- See April 2006 Shrimp Scampi Pasta recipe. Short cut - prepare sauce before sauteing shrimp. Use 1/2 tsp salt if using fresh shrimp, 1/4 tsp if using frozen.
- Heat the 1/4 cup olive oil in 12" skillet over moderately high heat until hot it not smoking, then saute shrimp turning over once, until just cooked through, about 2 minutes total cooking time. Transfers with large slotted spoon to a large bowl. Add garlic to oil remaining along with wine, salt, pepper, and cook over high heat for one minute, stirring occasionally, 1 minute. Add butter to skillet< stirring until melted . Add add chopped tomato and capers and thenand stir in shrimp. Remove skillet from heat.
- Use 4 small Tomatoes or 2 large.
