Italian Sausage And Potato Casserole
- 1 small onion
- 5 large potatoes
- 1 small green sweet pepper
- 1/2 tsp. salt
- dash of pepper
- 1/4 tsp. dried basil leaves
- 2 tsp. salad oil
- 6 sweet or hot Italian sausages (about 1 lb.) or kielbasa, cut into 6 pieces
- Preheat oven to 350u0b0.
- Thinly slice onion.
- Pare potatoes; slice 1/4 inch thick.
- Layer potato and onion rings in bottom of greased 1 1/2-quart casserole.
- Wash green pepper; cut into rings; arrange on top of casserole.
- Sprinkle with salt, pepper and basil. Pour salad oil and 1/2 cup water over the pepper.
- Arrange sausage on top.
- Cover tightly with foil.
- Bake 1 hour or until potatoes are tender.
- Remove foil; bake 1/2 hour longer, or until sausage is browned.
- Makes 6 servings.
