Bob'S Dirty Rice
- Chorizo 25g, sliced, chopped
- 1 1/2 yellow/red pepper, diced
- 2 scallions, chopped
- 1 cup (150g) mixed rice (long grain / wild / camargue)
- 1lb (450 g) ground beef
- 1 tbsp cajun seasoning or essence
- 3 oz chicken livers, chopped fine
- 3 stalks celery, chopped
- 1 bouquet parsley, chopped
- 1/2 can/bottle beer
- 2 cups beef broth
- heat cooking oil in a 4-qt saucepan. Add scallion, peppers, and celery. Braise until soft, 1-2 , minutes, stirring occasionally.
- Add ground beef and chorizo, brown the meat, stirring occasionally
- Add beer, cook down
- Add rice, Cajun seasoning and parsley, stir, cook one minute
- Add broth, black pepper, cook until liquid absorbed, ca 20 minutes
