Mustard Brown Sugar Glazed Salmon
- 1/2 cup Light Brown Sugar, packed
- 6 tablespoons Cider Vinegar
- 6 tablespoons Coarse Grain Mustard
- 2 tablespoons Olive/Vegetable Oil
- 4 cloves Garlic, minced (or sub garlic powder)
- 3/4 teaspoon Salt
- 1/2 teaspoon Ground Pepper
- 4 pieces Salmon Filets (6 oz each, 1 1/4 inches thick)
- 1. Foil & grease pan. Preheat oven to 500 degrees.
- 2. Mix all ingredients (except salmon) in a small sauce pan. Heat briefly on medium-low, stirring, until sugar is dissolved.
- 3. Remove any pin bones from the salmon. Pat dry with paper towels and season with salt and pepper.
- 4. Spread a thick layer of glaze on each filet, placing it glaze-side down on the oiled pan. Proceed to thickly glaze the top and sides of the filets.
- 5. Bake for 5 minutes. Reglaze the salmon. Bake for approximately 5 more minutes, just as the center has turned from translucent to opaque (or until 130 degrees)
