Chicken And Sausage Gumbo

  1. Saute white onions in oil; remove and drain.
  2. In same oil, brown cut up chicken; remove and drain.
  3. In same oil, add flour and cook on low heat until dark brown.
  4. To brown roux, add water, chicken, onions and sausage; heat until low boil to melt all roux. Add green onions and parsley; continue to cook on medium heat for 1 1/2 hours.
  5. Add file; cook additional 10 minutes.
  6. Initial seasoning applied to raw meat.
  7. Adjust seasoning midway
  8. through cooking.
  9. Skim excess oil after cooking.
  10. Serve over rice.
