Gluten Free Tea Loaf
- 300g mixed dried fruit, chopped
- Red Bush tea bag (or Earl Grey)
- 175g soft brown sugar
- 2 medium eggs, beaten
- 225g Gluten Free self raising flour
- 1 tsp xanthan gum
- 1 tsp cinnamon
- Make tea with the bag and 1/2 pint boiling water, allow to infuse for 4 minutes then pour over the fruits. Cover with cling film and set aside for at least an hour.
- Prepare a 1lb loaf tin by buttering then lining the bottom with greaseproof paper.
- Mix the sugar and eggs into the fruit/tea mixture then sift in the flour, cinnamon and xanthan gum.
- Stir thoroughly to combine the ingredients.
- Pour the mixture into the prepared loaf tin and bake for an hour or until a metal skewer inserted into the centre of the loaf comes out clean.
- Allow to stand for 10 minutes before turning out onto a cooling rack for at least half an hour. Slice, butter, enjoy!
