Gluten Free Tea Loaf

  1. Make tea with the bag and 1/2 pint boiling water, allow to infuse for 4 minutes then pour over the fruits. Cover with cling film and set aside for at least an hour.
  2. Prepare a 1lb loaf tin by buttering then lining the bottom with greaseproof paper.
  3. Mix the sugar and eggs into the fruit/tea mixture then sift in the flour, cinnamon and xanthan gum.
  4. Stir thoroughly to combine the ingredients.
  5. Pour the mixture into the prepared loaf tin and bake for an hour or until a metal skewer inserted into the centre of the loaf comes out clean.
  6. Allow to stand for 10 minutes before turning out onto a cooling rack for at least half an hour. Slice, butter, enjoy!
