Easy Lasagna
- 1 1/2 lb. ground beef
- 1 clove garlic, minced
- 1 Tbsp. chopped parsley
- 1 Tbsp. basil
- 1 1/2 tsp. salt
- 2 (1 lb.) cans tomatoes
- 4 (6 oz.) cans tomato paste
- 1 (10 oz.) pkg. lasagna noodles (raw)
- 2 (12 oz.) cartons large curd cottage cheese
- 2 beaten eggs
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. chopped parsley
- 1/2 c. grated Parmesan cheese
- 1 lb. Mozzarella cheese
- Brown meat and drain grease.
- Add next 6 ingredients.
- Simmer, uncovered, for 45 minutes to 1 hour.
- Combine cottage cheese with next 5 ingredients.
- Place 1/2 of the uncooked noodles in a 13 x 9-inch pan; spread 1/2 of cottage cheese mixture over; add 1/2 of Mozzarella cheese and 1/2 of meat mixture.
- Repeat layers.
- Bake at 375u0b0 for 45 minutes to an hour.
- Let stand 10 to 15 minutes before cutting.
- Serves 12.
