Cypriot Salad
- 5 cups Santa Sweets Grape tomatoes
- 3/4 pound of good quality Feta (or Halloumi if available)
- 1/2 medium sweet Vidalia Onion chopped in thin rings
- 3 small pickled peaches (storebought is fine), pits removed and cut into small cubes. (if not available, chop fresh peaches and add additional 2 T of vinegar, 1 t sugar, and a pinch of cloves)
- 4 T apple cider vinegar
- 1/4 cup good quality olive oil
- 1/2 t ground black pepper
- 1 can drained hole black olives (not brined or salt cured)
- 1 t of kosher salt
- large handful of fresh basil
- rinse tomatoes, olives, place in bowl. Cut onion in thin rings. Salt and peper to taste. Add vinegar, drizzel olive oil on top. Rinse basil, chiffonade. Add peaches.
- Cut feta or halloumi into small cubes. Toss all gently and serve at room temp.
